Position Description

Position Title: Dessert Specialist        
Department: Dining Services 
Reports to: Dining Services Director

The mission of Dining Services is to encourage physical wholeness by providing high-quality, nutritious food and excellent Christ-centered service at an exceptional value for our students, staff, and guests. Institutional Goals supported by Department: IG 3, 4, 5

A. Summary

The Dessert Specialist creates a variety of desserts, including cakes, cookies, and other sweets. This position will use both technical and creative skills as well as a steady hand and a trained eye. Creativity in dessert planning will be used for luncheons and various events hosted on the college campus.

B. Primary Duties and Responsibilities

1. Dessert planning and preparation for all college meals
2. Special event dessert planning on a larger scale        
3. Prepare ingredients and handle baking and other kitchen equipment
4. Ensure food is served with the highest quality in a timely fashion
5. Maintain quantity and quality of all food being served
6. Ensure a meticulously clean and safe food preparation area to be in accordance with all Health Department guidelines
7. Follow proper safety food storage and labeling procedures
8. Ordering new supplies and ingredients as needed
9. Responsible to supervise and train student employees 
10. Responsible to inform the director of equipment needs and repairs
11. Other duties as directed

C. Knowledge, Skills, and Abilities

1. Recipe knowledge and the ability to follow recipe directions
2. Ability to multiply a recipe to increase the yield for events and large luncheons
3. Ability to work in a fast-paced kitchen while following a recipe, safety protocol, and strict Health Department Guidelines
4. Must have a collaborative team spirit and ability to gently but effectively lead student employees
5. Technical and creative skills are a must for the execution of detailed desserts

D.  Minimum Education and Experience Requirements

1. Experience in using standard kitchen preparation items including cutting tools, bakeware, and ovens
2. One year prior knowledge of various cooking and baking procedures and methods
3. Ability to follow all sanitation procedures to ensure clean work areas with little to no continued direction while maintaining all chemical safety protocol
4. Positive and optimistic approach to lead a team in problem-solving in a busy kitchen
5. Ability to communicate effectively and clearly when giving direction
6. High school diploma or equivalent
7. Diploma from a culinary school would yield a great advantage to a candidate

F. Work Environment and Physical Requirements

This position will function primarily in a kitchen setting. While performing the duties of this job, the employee is regularly required to stand, walk, use hands and fingers to handle various kitchen objects and engage in two-way communication. The Dessert Specialist is required to reach with hands and arms carrying varied weight amounts and continuously uses hand strength to grasp utensils and carry pots and pans. This position will have to squat, stoop, kneel, reach above the head and reach out to the side and in front of their body. This position will regularly bend and twist at the neck and trunk more than the average person while performing the duties of this job. This position is also required to be on their feet for extended periods of time while maintaining a satisfactory speed of work. The employee may occasionally work with toxic chemicals such as degreasers and sprays and must be able to exercise extreme chemical safety to ensure their well being as well as other staff. The noise level in the work environment is usually moderate and this position will need the ability to work concentrated and on-task at all times while preparing desserts.
